The 2017 Extra Brut Efflorescence (100% Pinot Noir) displays good depth texturally and lovely persistence, but I would like to see more focus on the aromatics. Then again, this is a 2017. Zero dosage. Disgorged in March of 2023.
For Dominique, “Efflorescence” refers to “something that evolves in perpetuity” or a slow unfolding. Starting with the evolution encouraged by the small oxygen exchange in barrel, she feels that this wine in particular will reveal itself over time and is particularly ageworthy.
Site & Vines: Harvested from massale selection vines 35-40 years in age from a single parcel located in Polisot (Cote des Bar). Harvested from the bottom of the hill where there is more clay, which Dominique believes results in greater power and aging potential. (thus also the longer aging of 36 months)
Vinification & Elevage: Fermented in used barriques using natural yeasts (for both fermentations).
Sure Latte: 36 months on the lees, disgorged 3/23
