Tasting Note:
A light straw and lemon yellow gold color. A med+ but very pretty and persistent nose of lemons, limes, granny smith apples, saline, crushed chalky minerality, with a round, creamy leesy note. A medium body that feels texturally more + (plus) from the lees aging, juicy, fresh acidity, the med+ flavors are persistent, layered and complex. A very pleasurable wine, with a long, but elegant and persistent finish of fresh granny smith apples, a creamy edge to the palate with mouthwatering acidity, another banger from Nantais!
- Variety: Melon de Bourgogne
- Vine Age: Planted 1988
- Terroir: Located adjacent to the Gaïa vineyard, gabbro (volcanic) bedrock.
- Vinification: Biodynamic (in official conversion). Manually harvested, pressed directly, ambient yeast fermentation, aged for 8 months on the lees in concrete vats and foudres, no inputs during vinification or aging, minimal SO2 added at bottling.
Winemaking
Jerome Bretaudeau only uses natural yeasts, often utilizing extended maceration or co-macerates where more than one grape is involved. He avoids all additives and filtration, but the most creative input comes in the form of ageing vessels. Large and small casks, barrels, steel tanks, concrete eggs and terra cotta amphora are all utilized. Many wines spend time in more than one type and he is even trialing a solera ageing system. The resulting wines are complex and layered, with surprising depth and power.
