Grape varieties: 67% Pinot Blanc, 33% Pinot Beurot planted in 1990.
Our Tasting Note: Medium straw/gold. A rich nose of pronounced apple, kiwi and lime fruits, some flinty and struck match notes, slightly reductive. The nose gives a sense of oak but there is no new oak used. The palate is much more focused and finessed, med body, med+ acidity, med+ flavor intensity, the finish resonates quite long. Very nice indeed. 12.5% abv
• Vineyard: from a 0.2 hectare domaine plot, supplemented by some purchased grapes. Vines are located in the place called “Les Oats”, the grapes for purchase come from Arcenant and Yonne and all are 15-40 years-old.
• Terroir: “Les Avoines” is a very stony sector, well draining, composed of limestone scree (alluvial cone at the outlet of Combe). It’s a very early climate.
• Viticulture: Organic Agriculture. Soil work by plowing, then spontaneous grassing over the course of summer.
• Harvest: Manual in small 15 kg boxes, with sorting into vat room.
• Vinification and aging: The harvest is pressed for a long time (from 3 to 5 hours) with whole grapes and without input (neither sulfur nor enzyme, nor yeast). The juices are lightly settled cold for 12 to 24 hours, then ferment under the action of native yeasts in barrels. Aged in 600 liter barrels (half barrels, without new wood) for 12 months, then 4 to 6 months in stainless steel vats.
• Production: TINY, 3,000 to 5,000 bottles.
