Mousse Fils
100% Chardonnay
Extra-Brut: 2.5 g/L dosage
Our Tasting Note: Persistent mousse, tight, tiny bubbles. Medium- gold, some green flecks. Very much the outlier in a Pinot dominant lineup, this stood out and held its own well. Lots of fresh green and red apple, pear, some biscuit, not much toast, pure, precise, fresh and mineral in style. Med+ nose and palate intensity. Med+ body, acidity and length. Excellent!
This cuvée is made from a micro-vinification of Chardonnay coming from 2 lieux-dits, which have in common their deep rooting on green clay and their presence on a Meunier terroir.
- Lieu-dit “Les Varosses”, in Cuisles
- Lieu-dit “Les Terres Rouges”, in Jonquery
In the Champagne sphere, the name “Les Varosses” is often used to characterize a place where the grapes are not of great quality. Twenty-five years ago, we realized that this area had very deep soils, unlike the rest of the Cuisles hillside: 1.60m against 0.60m on the rest of the terroir. This is why we decided to plant Chardonnay, the perfect variety for deep soils. The similar atypical story of the lieu-dit “Les Terres Rouges” in Jonquery allows us to make this unique wine, especially since there had never been 100% Chardonnay in Cuisles before. Vintage 2019: harvest began on September 17. It’s a year in the Champagne standards which will mark the history by the quality of the wines.
