Their parcel of Montmains is small, just 0.65 hectare, and made up of on average 55 year old vines planted in a soil rich in blue clay (bleu d'argile). The domaine has one plot in Montmains itself, two in, Butteaux and one in Vieux Mulot, old vines across the piece. Montmains is on the opposite flank of the valley to Vaillons. Montmains sees less oak. Only about 10% used cooperage.
Winemaking: Fermented entirely in steel. Aged 24 months 1/3 in 1 year-old 600 liters French oak barrels and in 400 liters 1 year-old French oak barrels, and 2/3 in thermo-regulated stainless steel tanks. Barrels are shaped with hot water.

92+WA Kelley: The 2021 Chablis 1er Cru Montmains bursts with classic aromas of green apple, sweet citrus oil, white flowers and freshly baked bread, followed by a medium to full-bodied, satiny palate with good depth of fruit, racy acids and a penetratingly tangy finish. It's built to reward some bottle age.
