Moreau-Naudet's holdings in Vaillons are around 1.7 hectares of mostly 50-year-old vines. On the left bank of le Serein and on the middle of the slope, Les Vaillons is a particularly well-positioned site that enjoys an excellent reputation thanks to the work of several key growers. The Domaine works with vines in two sub-climats: one called Sécher which is very stony calcareous single block of 4 acres. The other, and another called Roncières, is warmer and provides more opulence. Sécher (usually) accounts for 30% of the blend and provides intense mineral cut and structure. Each parcel is vinified separately before being blended. The wine is aged and fermented in both tank and older barrels.

Winemaking: Slow pressing in a pneumatic press. Long “Debourbage” of 10 hours in order to avoid any useless fining or filtration. Aged 24 months 1/3 in 1 year-old 600 liters French oak barrels and in 400 liters 1 year-old French oak barrels (put in shape by hot water not fire), and 2/3 in thermo-regulated stainless-steel tanks.

92WA Kelley: Wafting from the glass with attractive aromas of pear, orange zest, white flowers and freshly baked bread, the 2021 Chablis 1er Cru Vaillons is medium to full-bodied, with an elegantly satiny attack that segues into a layered core of bright fruit, concluding with a saline, perfumed finish. It's produced from four of this large premier cru's climats.
