Deep Clay and Limestone topsoil that is shot through with tiny, fossilized oyster shells. Of course, this is the famous kimmeridgian subsoil all Chablis Grand Crus sit in. Single southeast facing block of 1.5 acres of 40+ year-old vines.
Winemaking: HFermented entirely in steel. Aged 24 months 1/3 in 1 year-old 600 liters French oak barrels and in 400 liters 1 year-old French oak barrels, and 2/3 in thermo-regulated stainless steel tanks. Barrels are shaped with hot water.

94 WA Kelley: The 2021 Chablis Grand Cru Valmur transcends the challenges of the vintage, unfurling in the glass with notes of orange oil, crisp green apple, peach, freshly baked bread and beeswax, followed by a full-bodied, satiny and layered palate of impressive depth and concentration. Racy and incisive, it concludes with a citrus blossom-infected finish.
