Cepage:  Pinot Meunier

Vineyard:  Grapes from the Rue des Noyers vineyard. The part of the parcel used for the Saignée is worked by horse

Soils:  Clay limestone

Viticulture:  Farmed biodynamically, grapes harvested at full maturity.

Vinification:  The maceration lasts 5 hours with severe selection on the triage table and then destemming. Maceration in stainless steel. No pumping over. Dehu opens the valve to take off only the free run juice.

Aging:  Fermentation and ageing in 4 year old 228 liter barrels on lees No malolactic fermentation; unfined and unfiltered 15 months sur lattes;

Notes:  A deep, dark and vinous saignee rosé with impressive concentration and cut. Stellar farming is felt in every sip.
