Our Tasting Note: Lemon yellow gold color. The bubbles are persistent, plentiful and tiny, a lively and nicely thick mousse. The nose is med/med+ with the 3 great components I like in a well made champagne, fruit, mineral, and autolytics. The nose rises with fresh fruit notes of apple, pear, and meyer lemons, while the minerality sits nicely in the background. Creamy and toasty notes round out the aromas nicely. The palate is medium bodied, med/med+ lively acidity, with med+ flavor intensity. The bubbles and minerality provide verve and a pleasant chalky texture in the med+ finish. Solid, a ringer for a well made value champagne.
Grapes: 97% Chardonnay 3% Aligote from minerally rich limestone soils
Base wine: 90% in thermoregulated stainless steel vats, 10% in oak barrels for 6 months.
Reserve wines: 15%
Aging: 18 to 20 months before disgorgement
Dosage: 8g/L
Crafted from grapes grown in northern and southern Burgundy (the Châtillonnais, Côte Chalonnaise and Mâconnais). The variety of the grape varieties used and where they are sourced from results in balance between Chardonnay's tautness, white flower aromas and minerality and Pinot Noir's fruit, density and vinosity. This cuvée derives its originality from expertise that combines the vinous quality of the base wines with the tautness of moderate/restrained dosage that is unusual for a Brut.
