The bottled 2022 Trousseau Singulier was harvested a little later and also destemmed by hand, pressed and put into 600-liter barrels, but unlike Poulsard that likes cold, Trousseau likes heat. Sixty percent of the volume was in open-top tanks with one month of maceration, and the rest was in closed tanks with a maceration of three months. This is earthier, toasty and with notes of dry hay and straw, reflecting a warm vintage with dry tannins. It finishes with some hardness that gives it rusticity.
SOIL TYPE 7 acres in 5 different plots named “Rosières”, “Béranger”, “en muzard”, “Corvées sous Curon” & “Chevrette”. South-West facing parcels made of limestone rock slide from the Bajocien era covering a clay subsoil.
VARIETAL 100% Trousseau – vines planted in 1930, 1942 & 1955. Indigenous grape to the Jura. Only 400 acres planted in France.
CULTURE Vines farmed Biodynamically with no use of herbicides or phytosanitary products. Use of sulfites and copper as well as plant infusions. Organic compost made at the estate. Traditional working of the soil. Manual harvesting in cases. Strict sorting on a sorting table. Certified organic and biodynamic.
VINIFICATION Destemming. Fermentation and maceration of 1 month in old French oak vats with few traditional racking. Ageing in 600 liters French oak barrels during 12 months (10% new oak). Bottled without filtration. Low addition of SO2.
