The golden-colored 2020 Crémant du Jura Blanc de Noir comes from a massal selection of Pinot Noir on clay soils. There is more bitterness here, more vinous character. It has a copper color and an intense nose, pungent and dry. From now on this, will also be a vintage blend, not a single-vintage wine.

CULTURE
· Vines farmed with no use of herbicides or phytosanitary products.

VINIFICATION
Alcoholic fermentation of the base wine in old French oak barrels followed by 3 month of ageing on lees.
In January, base wine is bottled for the “prise de mousse” or second fermentation in bottle.
Ageing “Sur lattes” with lees in bottle during 13 months.
Unfined, Unfiltered and contain “0” added SO2.
“0” dosage – Extra Brut.
Only 500 cases production.
