The 2021 Uno (Sangiovese) is a gorgeous, super-classic red from Sean O'Callaghan. Readers will have to be patient with the 2021, as it is a driving, structured wine, its mid-weight structure notwithstanding. The 2021 Uno shows a medium-dark garnet appearance with pretty color saturation. This is 100% Sangiovese with fruit sourced from the village of Radda. There is a slightly wild side to the bouquet with fresh iris, pressed rose and cassis. Uno does a great job of bringing out both the delicate fruit tones and the floral side of the grape. Its texture is silky, long and polished.
Fermentation: in cement and open bins, maceration 40-60 days
Aging: 18 months, 10% new tonneaux, the remainder in cement and stainless steel
Soils are mixed plots favor either"Albarese" limestone over clay and sandy loam or 'Galestro" sandstone and compacted shale. the vines are from 20-50 years old. The grapes are fermented in cement. a small portion of the wine is crushed by foot and begins fermentation in an open bin. about 20% whole cluster, the rest of the grapes are destemmed. Maceration of 40-60 days with very small pump-overs performed over time. The wine from each site is fermented and aged separately until the final blend. Aged 18 months 10% new tonneaux the remainder in cement and stainless steal.
