My Tasting Note: Of the two sparklers tasted, the more serious and complex of the 2. More gastronomic and very much made from Cabernet Franc! The color is a medium- gold. The nose is med+ with tangy, salty notes, red apples, clay and loamy notes, and a touch of pyrazine and florals from the Franc. The palate is med/med+ bodied, with med/med+ acidity, with med+ flavor intensity and a med+ finish. Excellent, fun complexity here!

Dosage: 3g/L - Brute Nature
Terroir: From vines 30 years-old on average in limestone calcarious chalky soils.
Vinification: Fermentation of the “vin de base” in stainless steel vats. Second fermentation in the bottle following the strict Méthode Traditionnelle. Artisanal riddling on wooden racks. 12-18 months aging “sur lattes” in the troglodytes caves of the Château. Brut dosage of 3 g/L
