In 2022 they got very good balance in their wines, with a little more ripeness but also higher acidities, and the 2022 Cullerot has more intensity and structure and a dominance of old vines and white soils. It's 50% Macabeo, 15% Verdil, 15% Malvasía, 10% Pedro Ximénez and 10% other varieties, with 13% alcohol. It's more serious, balsamic, with notes of herbal tea, flowers and fennel, deep and balanced, with a little more complexity and length. It matured in 2,600-liter clay tinaja for six months. There seems to be more influence from a large plot of old Macabeo that was introduced in the wine. The quality transcends the price. 60,000 bottles were produced. Our Tasting Note - Tasted 1/25/24
A medium lemon yellow color, watery rim. The nose med+ is like a white rioja with a salty tang, a little waxy, a mix of lemon/lime fruit and peel and white plum, with a saline minerality. The palate is medium bodied, with excellent acidity paired to the perfect ripe fruit and mineral notes. Long, fresh and very appealing on the finish. Excellent!
Cullerot, which means tadpole, is the white that Pablo makes in the old cellar utilizing heirloom and indigenous varieties including Macabeo, Malvasía, Pedro Ximénez, Verdil, and others. The goal is to base the wine on Mediterranean varieties best suited to the region – varieties that fully ripen with more modest alcohol levels.

Viticulture: 30-70 year-old vines, organic farming. Planted in clay loam, sandy loam at 600m.
Winemaking and aging: Whole cluster press, natural yeast fermentation beginning in tank and transferred to amphorae to finish fermentation. Aged 6 months in amphorae
