50% Sauvignon Blanc, 50% Sémillon; vines 45-60 yrs old; from a 1 hectare plot of clay & Limestone on fissured rock. Aged in new oak barrels for 8 months. 8 barrels made: 4 barrels complete malolactic fermentation, 4 barrels do not. Final wine is a blend of all barrels. Because Hervé’s vines are five decades old and therefore have access to deep water reserves, and because their location is in one of Graves’s cooler microclimates, this Blanc is incredibly consistent, year in and year out: crisp, fresh, and refreshing with notes of citrus, cut grass, and subtle tropical fruits. It remains among the best values in all of France and a wonderful expression of Bordeaux’s white-wines
